sunday night's dinner was a big hit. and this is a great spring recipe- full of veggies and color. very easy to make and hard to screw up. the only fattening things in it are feta cheese and mayonnaise in the dressing (which i made), but i always use light on both accounts. you can't tell the difference once it's in there. left the olives on the side (not everyone likes them) and the dressing is mixed in before eating. i wanted to be sure everyone liked it before committing them to it, and wanted to get a picture with all the beautiful veggies. color = healthy, unless you're eating peeps. and we made the clean plate club. A's peanut butter pie was a great finish, and everyone was happy and satiated.
